Pembroke Bakery officially opened from Courtney’s home kitchen in early 2023 and quickly grew, moving into a shared commercial kitchen in November 2024. The bakery is known for thoughtfully sourced cookies that are both delicious and giftable. Courtney has expanded wholesale partnerships, launched new product lines, and built a loyal online customer base—all while maintaining a focus on sustainable sourcing and supporting local initiatives.
